A refreshing rockmelon salad for your kids. The salad is nutritious, tasty and filling, but not too heavy. It takes only about 15 to 20 minutes to prepare. A delight for rockmelon lovers.
4 cups Baby lettuce leaves
1 1/2 cups Rockmelon balls
1 cup Pecan nuts, chopped
1/2 cup Extra virgin olive oil (EVOO)
4 tablespoons White balsamic vinegar
4 tablespoons Honey
Salt and pepper
Blue cheese (optional)
- Arrange lettuce leaves in a serving bowl and top with the melon and pecans.
- Mix together the oil, vinegar and honey in a small cup. Season with salt and pepper to taste. Drizzle over the salad and dress it well.
- Sprinkle with blue cheese (optional) and serve.
